‘Nog Chia Seed Pudding

Chia seed pudding is a favorite dessert of mine. It is rich in saturated fats and fiber which makes it filling, and it’s delicious so it is mentally satisfying as well. So I love So Delicious Coconut Milk ‘Nog. It’s FAN-tastic. However, I don’t love the MSG, guar gum, xanthan gum or annatto (even if it is natural.) I was in the mood for something sweet but knew I’d been pretty low-fat lately so I figured I was really craving fat. I was right. This dessert totally hit the spot PLUS tasted better, in my opinion, better than So Delicious ‘Nog.

This is a great dessert for the holidays. It’s healthy, vegan, paleo, egg free, dairy free, gluten free and so, so tastey.  To top it off, it’s no bake. You mix, put in a pretty bowl and stick in the fridge. You can’t beat that.

'Nog Chia Seed Pudding

Servings 4 servings

Ingredients
  

  • 14 oz can of full-fat coconut milk
  • 1/4 cup plus 1 tbsp black chia seeds
  • 3 tbsp pure maple syrup
  • 1/2 tsp gluten free vanilla extract
  • 1/4 tsp nutmeg
  • 1/8 tsp cinnamon

Instructions
 

  • Pour all ingredients into a bowl and mix well. Cover and let cool in the fridge for at least two hours.
