Citrus Herb Marinated Cod with a Grilled Pineapple Salsa

I love fish and I don’t feel like I cook it enough. Last night my friend and I challenged ourselves to create yummy fish recipes we could enjoy. She made a mango ceviche and I made this recipe. I actually was planning on making something completely different, but I couldn’t find half of the ingredients! This recipe is what we ended up with and it was amazing! Of course, it’s super simple too. Totally my jam.

My friend has a hibachi grill and it was my first time cooking on it. 5 stars, highly recommend. It was so easy to cook on and the food came out amazing. If you do not have a hibachi grill, getting a grill topper (like this one) for the bbq would be a great way to go. The other option is to use non-stick skillets. Cook the cod in one and the salsa in the other on medium-high heat.

I used a prebought marinade instead of making my own because it was more affordable. Buying 6 different ingredients doesn’t always make sense, especially if I’m not sure when I’ll use them again. I’m a big fan of shortcuts so please take any that you can as long as the ingredients are clean.

Citrus Herb Marinated Cod with a Grilled Pineapple Salsa Recipe

You’ll need a pound of cod (fresh or frozen and thawed), New Primal Citrus Herb Marinade, red bell pepper, onion, pineapple (I bought the precut cubes instead of a whole one), avocado oil, salt, and red pepper flakes. Simple right? LOVE IT. Cut the cod into large steaks so they fit on your cooking surface (not too small or it’ll fall apart). Then I put them into a bowl and covered with a cup of marinade and a tablespoon of avocado oil.

Then I cut my pineapple and red bell pepper into small cubes (for faster cooking and easier eating). Then sliced my onion into strips. I put them all in a bowl, added a tablespoon of avocado oil, a couple pinches of salt and a sprinkle of red pepper flakes. I don’t have exact measurements for you. I typically start with a little then after cooking add more if needed.

Place on the hot grill (at least 450) and cook for 4 minutes. Flip and cook for another 4. Flip again if needed until fish is fully cooked. You want a little char on your salsa. Once fully cooked, remove from the grill and place your salsa on top. Serve warm.

Ingredients
  

  • 1 lb Cod
  • 1 cup The New Primal citrus herb dressing
  • 2 tbsp avocado oil, divided
  • 1 cup chopped pineapple
  • 1 cup chopped red bell pepper
  • 1 small onion, sliced into strips
  • salt
  • red pepper flakes optional

Instructions
 

  • Depending on how long your cod is, cut into filets that can fit on your grill tray. Place in a bowl and cover with the marinade and a tablespoon of avocado oil. Let sit for at least 10 minutes.
  • While the fish in marinating, cut your bell pepper, pineapple and onion into slices that can either fit on the grill pan or in your skillet. Place in a bowl and toss with a tablespoon of avocado oil and salt.
  • Preheat your grill on high heat. You want it to get up to 450.
  • Place fish on a grill pan and if it fits, your salsa.
  • Place on your grill and cook for 4 minutes. Flip and cook for another 4 or until fully cooked. The cod will fall apart when it's fully cooked and will be opaque. You want your salsa to be slightly charred. That's the best flavor.
  • Remove from the grill and put the salsa on top of your cod and serve.
