2 ½ years ago my husband and I went Gluten Free.  My husband was misdiagnosed with a medical condition that responds well to a gluten -free diet.  While on the diet I found that all of my stomach issues disappeared, my migraine headaches became almost non-existent, my “arthritic” joints didn’t hurt and I lost belly fat.  Not long before starting the diet I had gone to the doctor and had routine lab work done and was found to have low B vitamin levels and low sodium.  Now, anyone that knows me would be astounded that I had low sodium levels as I am a saltaholic, 10 months after changing how we eat my labs were all great.

For over a year I struggled with cooking and eating the same thing, I felt deprived because I didn’t know all the names for gluten and many times when I tried buying pre-packaged food even what I thought was a good choice either definitely had gluten in it or cross contamination and I would end up in a lot of pain or having bloating and gas.  I was bored with my food choices, but didn’t know what to do. Marian came to my rescue and helped me learn how to find hidden gluten on labels when grocery shopping. She changed the way I look at food and expanded how to cook food and try different food. She helped me to start experimenting and expanding my cooking skills.  I invested in a mandolain and food processor. I have to tell you – I don’t know why I didn’t invest in these a long time ago. Prep time is cut in half and I can add vegetables to sauces and stuffings that my husband “doesn’t like” and he doesn’t even realize they are in them and he is getting a more nutritious diet and he LOVES the food.

With Marian’s help I have been able to lose 28 lbs and counting, I’m going to the gym at least 3 times a week, she has motivated me to feel better about myself, reduce my stress and just to have more fun.  She has helped me go through my closet and get rid of unflattering clothes.  I feel like a new and improved person.  Thanks Marian for all your help.
