Every now and then a craving strikes for a relatively unhealthy food. Lately, it’s been for an egg roll. I used to love them so much. Unfortunately, you can’t find them gluten-free anywhere. I wasn’t about to let that stop me! I had a thought. What if I made an egg roll without the wrapper? An egg roll in a bowl?! It was decided. I had to make this happen.

You won’t even believe how easy it is to make this dish. Not only is it delicious, but it is also versatile and inexpensive (just the way I like my recipes to be). You can use any kind of ground meat you like (I’m not sure how lamb would taste but any other ground meat would definitely be tasty). This means it’s an easy one to throw together no matter what meat is on sale that week. Score! Then the rest is a bag of coleslaw mix (cabbage and carrots), a yellow onion, sesame seed oil, ground ginger powder, minced garlic, sea salt and coconut aminos (or tamari sauce). If you are really feeling like getting fancy, green onions and toasted sesame seeds as garnish.

That’s it! So fun.

First up, get a large deep skillet and heat on medium heat. Once it’s hot, add your sesame seed oil to the pan and coat the bottom of the pan. Then add your ground meat, break it into small pieces and brown it for 5-8 minutes. While the meat is browning, chop your yellow onion. Once it’s browned, move it to the side of your pan and add the onion to the pan. Let cook 3-4 minutes, stirring a couple of times for even cooking. Now add your ground ginger powder, garlic and sea salt (omit sea salt if you are using soy or tamari sauce). Stir everything together and cook for 1-2 minutes. Now add your slaw mix and coconut aminos). Mix in and cover for 4 minutes. After 4 minutes, stir well (you want everything to cook evenly) and cover for another 4 minutes. Uncover and stir again. Let cook for another 1-2 minutes (or until cabbage reaches your desired doneness). Serve in bowls and garnish with chopped green onions and sesame seeds.

Ingredients
  

  • 1 lb ground meat

  • chopped green onions
