Jicama Beet Citrus Salad

For some strange reason I have been craving beets all week.  Then a dear friend of mine, Chelsi Jo, the owner of Two Lemons in Love, suggested this amazing recipe I am sharing with you. This recipe includes jicama. I love jicama. I discovered it two years ago, is a staple with my hummus and my go to when I am craving crunch. You might be asking yourself, “What is a jicama?” and that is a very good question. This is a Jicama:

This oversized turnip looking thing grows in tropical climates and is a low calorie, crispy, crunchy root. It has a mild potato like flavor and can be eaten raw or cooked. I love it raw. Jicama chips go great with hummus, just saying. It’s extremely low calorie, a good source of vitamin C and fiber. Contains small amounts of B vitamins as well as magnesium, copper, iron and manganese. To eat it, you peel (or cut) off the outer skin as it is not edible, then with the white “pulp” you can make it into fries or chips or 1/2 in pieces that is in our recipe today to add to salads.

Needless to say, I was SUPER excited when I learned this recipe. Beets and jicama together? Awesome. Gluten and dairy free? Even better than awesome.

Ingredients:

  • 1/2 cup jicama, chopped
  • 2 medium sized beets
  • 1/2 a medium sized valencia orange (Navel would be good too)
  • 1 lime
  • 1 tsp peanut oil (if you are allergic to peanuts, try sesame oil)

Make it:

  1. First you will need to boil the beets until they are easily pierced with a fork. This will take forever. About 45 minutes.
  2. When the beets are ready, drain the water and let cool.
  3. While the beets are cooling off, cut off a decent piece of the jicama. Eye ball is to be about a half a cup. Then peel off the skin and chop into 1/2 in pieces.
  4. Peel the orange and split in half. Then chop into 1/2 in pieces.
  5. In a separate bowl, juice the lime and mix well with the peanut oil.
  6. Once beets have cooled a little (you can run under cold water to help the process along), peel off the skin and cut into, you guess it, 1/2 pieces.
  7. Mix all together and pour sauce.

Serves 1

Super easy. Great for summer. Absolutely delicious.
