Oh my goodness y’all. I don’t know how I have waited so long before making homemade loaded paleo nachos. While I was never an avid nacho eater, who doesn’t love good nachos every now and then? It’s been like 7 years since I’ve enjoyed nachos. I usually stick to chips and salsa or chips and guac. It’s not a bad thing but lately, I’ve been hanging out with people who do love nachos and I started having cravings. Restaurants just don’t carry corn free chips, which is fine, so that meant it was time for me to make them myself.

I am SO glad I did. Talk about delicious! What I love about this recipe is that it will be as easy as running to the store for premade everything, or you can make it an event and do it all from scratch. There are days I want it all done for me and days I want to do my “dance” in the kitchen, so I totally get it. Today I’m going to share with you the easy, premade version.

Loaded Paleo Nachos

For 4 servings you will need 1 bag of sweet potato chips or plantain chips, 1 pound of lean ground beef, 1 tablespoon taco seasoning1 cup pico de gallo, 2 cups guacamole (I love guac so I’m liberal with my application of it), 2 green onions, and if you’d like, cilantro for garnishment.

First you will need to cook up your ground beef. On medium heat, start browning the meat and break it apart into small pieces. Apply taco seasoning and cook until the meat is cooked completely. About 8-10 minutes. While that is cooking thinly slice your green onions and rough chop your cilantro. Drain the fat from the beef and set aside. Take your plate(s) and layout your chips of choice. Then layer with ground beef, pico, guacamole, green onions, and cilantro. I like to pair with a hard apple cider or margarita. Serve and enjoy!

Ingredients
  

  • 1 bag sweet potato chips or plantain chips
