Paleo Pesto Red Pepper Turkey Roll-Ups

Breadless and wrapless sandwiches are a simple on the go paleo meal. My pesto, red pepper, and turkey roll ups are simple and delicious. Earlier this week I made an incredibly delicious dairy free pesto sauce (recipe here) and needed to use it up. It is incredibly delicious but because it’s so fresh, however, it doesn’t last long. Adding it to any type of sandwich makes for a fancy sandwich and this grain free version isn’t excluded from that. It is so tasty!

All you need is some slices turkey breast, some baby greens, pesto sauce, and bell pepper. I added avocado because I absolutely love it and it’s a great replacement for cheese! Lay out your turkey slices on a plate, then add a tsp of pesto per turkey and spread around. Then layer in the avocado, bell pepper, and greens and roll up. Simple! If you aren’t going to be making a bunch to eat during the week I recommend adding toothpicks so they don’t unravel.

Meal planning and prep makes living life grain free so much simpler. These are easy to make in snap though and kids love them too. My kids love them stuffed with cheese and pickles. If you are trying to get your kids (or spouse) to eat less gluten or go gluten free, roll-ups like this can be a simple way to keep them eating familiar ingredients sans the bread. It can be an easier adjustment.

Ingredients
  

  • 6 slices gluten free turkey breast lunch meat
  • 1/2 red bell pepper
  • 6 tsp dairy free pesto sauce
  • 1 cup baby spring mix lettuce
  • 1/2 haas avocado

Instructions
 

  • Take the bell pepper and avocado and cut into 1/4 inch thin slices.
  • On your lunch meat, to one side, layer the ingredients. Carefully roll to the other side.
  • Easy and done!
