Kale is a superfood. A great source of vitamins K, A, C, and high in calcium and manganese. Kale helps our eyesight, strengthens our immune system and makes our bones strong. At only 33 calories a cup, we can eat kale all day long without gaining an ounce. This recipe uses extra virgin olive oil (EVOO) which is essential for our bodies to be able to absorp and use the vitamin K, a fat soluable vitamin. Salt gives great flavor and very little is used.
Kale chips are a tastey way to consume this interesting tasting green. However, making kale chips can be somewhat tricky. They are thin, easy to burn, and if you’re not careful, can be oily or dry. This recipe will have you saying “Wow! These are really good.” One $2.50 bundle can make a huge bowl as well.

Ingredients:
- Kale (however much you want to make)
- EVOO in an oil sprayer
- Salt in a grinder
Directions:
- Preheat the oven to 425
- Rinse the dirt off of the kale, then pat dry with a paper towel.
- Tear the kale off of the stalk making about 3 in long pieces. The pieces might be smaller towards the bottom of the stalk. That’s ok! They won’t burn.
- On a cookie sheet, spread out kale evenly. They can be close together but don’t overlap. Evenly spray the top side with oil. Then sprinkle lightly with salt.
- Turn off the oven. Leave in for 20-25 minutes.
- Enjoy!
