I love finding new ways to use up fruit in the summers. This Summer Salad with Strawberries, Mango, and Avocado is sweet and refreshing while still being filling. You won’t even miss the meat. If you do though, shrimp would be a fantastic addition to this salad.

This recipe was designed for a friend of mine. She isn’t as big of a fan of salads as I am and really wanted something fruity and sweet. So we looked on the counter and found fruit to put on our bed of dark leafy greens and added a balsamic vinaigrette from the fridge. She loved it and it is truly perfect for the hot days of summer.

Finding ways to include more greens in your diet is always recommend. They are nature’s multivitamin and aides in detoxifying the body. If you are looking for ways to eat more of them, give this salad a try and let me know how you like it by leaving a comment below!

Summer Salad with Strawberries, Mango and Avocado

Servings 2 large salads

Ingredients
  

  • 4 cups baby spring mix
  • 10-12 strawberries
  • 1 mango
  • 2 haas avocados

Instructions
 

  • On two large plates, place 2 cups (overflowing loose handfuls) of baby greens each.
  • Cut off the tops of the strawberries then quarter.
  • Cut your mango and avocados into 1/2 inch pieces. Divide all the fruit evenly.
  • Top with a dressing of choice. We chose an olive oil vinaigrette.
