Here in Phoenix Citrus season is in full bloom and tropical fruit is delicious and incredibly affordable. Putting them together created a phenomenal tropical citrus salad topped with a honey cardamom dressing that was a big hit at Christmas dinner.
Amazing Cardamom
Cardamom is a spice I was introduced to in Turkish coffee. I absolutely love it in coffee, it’s also used in curry based recipes (another favorite), and it is fantastic on this fruit salad. Cardamom is popular in the Middle Eastern part of the world but not well known here in the States. Cardamom has many medicinal properties as most herbs and spices do. It is known for aiding in digestion, treating urinary tract infections, healing mouth ulcers, reducing blood pressure, and can even help stop hiccups. Along with being popular in coffee, it is often used in curry based dishes. (source)
The Recipe
I definitely recommend finding ways to use it in your everyday cooking and this salad is a great place to start! For this salad I decided to use what is on sale at my health food store and use of some oranges that were given to me. I used a sweet pineapple, ripe mango, oranges, and added frozen strawberries for some color. Chop up your fruit into bite size pieces and place in a large bowl. In a small mixing bowl add the lemon juice, honey, and cardamom and mix until smooth. Pour over the fruit and gently toss salad. Let it sit for a few minutes up to a few hours before serving.
