The holidays are here!!!!!! That means tons of traditional treats coming our way. One of these traditional treats is candied fruit. I never knew this was a thing until recently and I can’t believe I never really knew about it! The Paradise Fruit Company sent me a large variety batch and I have had a blast creating recipes with my goodies. While there are tons of recipes for baked goods, there are not many grain free recipes out there. I’m excited to share with you a grain free scone with candied cherries, pineapple, and orange peel.

I had several people who don’t eat gluten free taste these and they loved them. Once I got their approval I just had to share with you! Let’s get to the recipe.

Scones Recipe

For this fabulous grain-free recipe you will need: 1 cup of finely ground almond flour, 1/4 cup coconut flour, 2 tbsp raw cane sugar (optional but gives a great texture), 1/2 tsp baking powder, 1/4 tsp sea salt, 1/4 cup plus 1 tbsp almond milk, 2 tbsp melted coconut oil, 1 large egg**, 1 tsp vanilla extract, 1/2 cup of the candied cherry pineapple mix and 1 tbsp candied orange peel.

If you like to top with a glaze mix together 1 tbsp melted coconut oil, 1 tsp raw sugar, 2 tbsp candied orange peel.

** To make egg-free: use one flax egg plus 3 more tablespoons of almond milk. You make one flax egg by combining 1 tbsp flax meal with 3 tbsp water, mix and chill in the fridge for 30 minutes.

How to Make Them

To make the scones, preheat the oven to 350. Place dry ingredients, except candied fruit, into a medium size bowl and whisk together. Place wet ingredients into a small bowl and whisk together. Add wet ingredients into the dry ingredients, mix completely with a whisk. Coarsely chop candied fruit and add to batter, stirring in with a baking spatula by hand.

Line a baking sheet with parchment paper. Place the batter onto the baking sheet in a large lump. Using the spatula, spread the lump into a 3-4 inch tall, flat-topped circle. Then take a long knife and cut into 8 even pieces. Wiggle before removing the knife to create space between slices. Clean the knife between cuts for easy and clean lines. Bake for 20-30 minutes (ovens vary greatly). Remove from the oven and let cool before serving. Store in an airtight container for up to 3 days.
