Gazpacho

Servings 6 servings

Ingredients
  

  • 3 roma tomatoes
  • 1/2 english cucumber
  • 1/2 red onion
  • 1 bell pepper
  • 3 cloves garlic
  • 4 cups tomato juice
  • 1/4 cup extra virgin olive oil
  • 1/8 cup white wine vinegar
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1/4 tsp cumin

Instructions
 

  • finely chop all vegetables and mince garlic. Add into a large bowl.
  • Add tomato juice, vinegar, olive oil and seasonings. Mix with a spoon.
  • Cover and chill in fridge for at least 2 hours before serving.
