Arugula Salad with Beets, Goat Cheese, And Pepitas

  • 2 handfuls arugula
  • 1/4 cup diced boiled or roasted beets
  • 2 tbsp crumbled goat cheese or feta cheese
  • 2 tbsp raw pepitas
  • 2 tbsp balsamic vinaigrette dressing


  • On a plate or large bowl, place arugula, then top with beets, cheese, pepitas, and dressing.
