Watercress Salad with Blueberries and Oranges with a Balsamic Vinegarette

Servings 1 serving


  • 1 handful watercress
  • 1 handful baby spinach
  • 1/3 cup raw blueberries (or a small handful)
  • 1/2 naval orange
  • 2 tbsp balsamic vinegarette
  • 1/2 cup cubed chicken (optional)
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 1 tsp dijon mustard
  • garlic powder
  • onion powder
  • 1 pinch sea salt


  • In a bowl, add greens and mix together.
  • Cut your orange in half, place one half in a bag and place in the fridge. Peel the other half and cut into small pieces. Add to salad.
  • Add blueberries and diced chicken if you desire.
  • In a small bowl mix together the ingredients for the dressing. Pour on top of the salad.
  • Enjoy!
