Loaded Paleo Nachos

  • 1 bag sweet potato chips or plantain chips
  • 1 lb lean ground beef
  • 1 tbsp taco seasoning
  • 1 cup pico de gallo
  • 2 cups guacamole homemade or store bought
  • 2 green onions
  • 4 tbsp rough chopped cilantro for garnish (optional)


  • On medium heat, start browning the meat and break it apart into small pieces. Apply taco seasoning and cook until the meat is cooked completely. About 8-10 minutes.
  • While that is cooking thinly slice your green onions and rough chop your cilantro
  • Drain the fat from the beef and set aside.
  • Take your plate(s) and layout your chips of choice. Then layer with ground beef, pico, guacamole, green onions, and cilantro.
